that kitty hat is just too cute... I bet you could follow some of the basic patterns with the ear flaps and add the ears on like they did in the knit pattern.

The first is a helmet pattern, the second is a cat hat, so you can combine the two. Have fun, and let me know how it goes, okay?

I dont know wether this is sort of what you mean, but I am sure you could add the ears if you wanted. I have used this one and it turns out well. It is from the Cleckheaton site which is in Australain British terms, so beware to translate if you use it.
